Chilli Con Carne

Published by JD under Recipes, Rib Stickers

The Spice Blend
Ok, I could pretend to be all hardcore and say I mix my own spices all the time, but you’d probably see right through that (any of you who know me anyway). When making Chilli, I always just used a packet of Chilli Con Carne seasoning. Laziness, or pragmatism? I’ll let you decide [...]

Bechamel Sauce (White Sauce)

Published by JD under Recipes, Sauces

Hi folks. Well, it’s been about 6 months since we last posted, and we keep saying we must get down to it and start posting again. So I’m putting up this nice handy one to ease us back into it.
This is a classic White Sauce. It can be served with Roast Chicken, used in Lasagne, [...]

Quick and Dirty Burritos

Sorry about the recent lack of posting, but between work and dogs, and the fact that it’s dark and we’re tired, we just haven’t been up to it. We also haven’t been that great about thinking about new recipes, but this is the one we’re currently working on improving.
So, last night we arrived home late, [...]

The dreaded C-word.

Published by Margaret under Christmas

According to Lette, Christmas is eight six-ish weeks away. Eep! I have to admit that I’m fairly grinchy most of the time; I think it’s way over-rated and I hate hearing Christmas songs on the radio in November! I do really love the Budweiser Christmas ad though, and have done since I was a child, [...]

Traditional Irish Brown Soda Bread

Published by JD under Books about Cooking, Bread, Recipes

I’m a firm believer that Ireland has the potential to be up there among the world’s “Culinary Capitals”. In fact, I’d suggest that the reputations of other “Culinary Capital” countries are as much due to some clever marketing than anything else. This is a common rant of mine (especially after a few pints), so I’ll [...]

Chocolate Chip Cookies

Published by Margaret under Dessert

I originally nicked this recipe from here, but it’s so good I’ve been claiming it as my own ever since. Now, it’s in American, and I don’t have the brains to translate it into metric, so you’re either going to have to mark it up on a measuring jug (1cup=240ml) or get hold of measuring [...]

Roast Stuffed Pork Steak

This is one of those dinners that looks impressive, but because all the effort is earlier, you still look cool and relaxed when it actually gets to dinnertime.
You need:
1 x Pork Steak
1 x Pkg of Parma Ham (we get ours in Aldi)
1/2 loaf of white bread or packet of breadcrumbs.
Mixed herbs
about 110g butter
2 med white [...]

Sauces - General Tips

About a year ago, I got the notion that I would learn how to make sauces. I’ve always liked a decent sauce with my food, so it was beginning to bug me that I couldn’t make my own. To fill this knowledge gap, I went and bought Sauces: Sweet and Savoury, Classic and New by [...]

Delia’s Chocolate Brownies

Published by Margaret under Dessert

This is the easiest brownie recipe ever, though maybe not the recipe with the least amount of washing up. The recipe originally started off as a Delia Smith recipe, but I added a few bits just to up the flavour. I’m good  like that.
This recipe is very straightforward as it doesn’t require any whisked egg [...]

Beef Teriyaki

Published by Margaret under Recipes

Again with the inauthentic recipes. And again it tastes good, so we don’t care. This recipe came from a book given to me by my old boss at the Wild Onion CafĂ© in Limerick. The Book is called Gourmet Cooking for Two, by Beatrice Ojakangas, and was originally published in 1970.
Our favourite recipe from this [...]
